Ingredients
Kingfish (Korameenu) – 500 g, cleaned & cut into steaks
Turmeric – ½ tsp
Red chili powder – 1–2 tsp
Coriander powder – 1 tsp
Garam masala – ½ tsp
Ginger-garlic paste – 1 tsp
Lemon – 1, juice
Curry leaves – few
Oil – 3–4 tbsp
Salt – to taste
Execution
1. Marinate Fish
Mix turmeric, red chili powder, coriander powder, garam masala, ginger-garlic paste, salt, and lemon juice → coat fish pieces.
Marinate 15–20 mins for best flavor.
2. Fry Fish
Heat oil in a pan → add curry leaves → sauté 30 seconds.
Shallow fry marinated fish on medium flame 4–5 mins each side until golden and cooked through.
3. Serve
Serve hot with rice, lemon wedges, or rasam/sambar.
Additional tips
Use fresh kingfish for firm texture and rich taste.
Fry on medium flame to avoid burning and keep fish juicy.
Marinate slightly longer for deeper flavor penetration.
