Ingredients

  • Kingfish (Korameenu) – 500 g, cleaned & cut into steaks

  • Turmeric – ½ tsp

  • Red chili powder – 1–2 tsp

  • Coriander powder – 1 tsp

  • Garam masala – ½ tsp

  • Ginger-garlic paste – 1 tsp

  • Lemon – 1, juice

  • Curry leaves – few

  • Oil – 3–4 tbsp

  • Salt – to taste

Execution

1. Marinate Fish

  • Mix turmeric, red chili powder, coriander powder, garam masala, ginger-garlic paste, salt, and lemon juice → coat fish pieces.

  • Marinate 15–20 mins for best flavor.

2. Fry Fish

  • Heat oil in a pan → add curry leaves → sauté 30 seconds.

  • Shallow fry marinated fish on medium flame 4–5 mins each side until golden and cooked through.

3. Serve

  • Serve hot with rice, lemon wedges, or rasam/sambar.

Additional tips

  • Use fresh kingfish for firm texture and rich taste.

  • Fry on medium flame to avoid burning and keep fish juicy.

  • Marinate slightly longer for deeper flavor penetration.
