Ingredients
Cooked chicken – 200 g, shredded or diced
Cucumber – 1 large, diced or sliced
Onion – ½, thinly sliced
Tomato – ½, chopped
Green chili – 1, finely chopped (optional)
Lettuce / Mixed greens – 1 cup
Olive oil – 1–2 tsp
Lemon juice – 1 tbsp
Salt & black pepper – to taste
Fresh coriander / mint – 1 tbsp, chopped
Execution
1. Prepare Vegetables
Wash and chop cucumber, onion, tomato, and greens → place in a large bowl.
2. Add Chicken
Add shredded/diced chicken on top of vegetables.
3. Dress Salad
Drizzle olive oil and lemon juice → sprinkle salt and pepper → toss gently.
4. Serve
Garnish with coriander or mint.
Serve chilled as a healthy lunch or snack.
Additional tips
Use grilled or roasted chicken for richer flavor.
Toss just before serving to keep cucumber and greens crisp.
Add nuts or seeds like sunflower or pumpkin for crunch and extra nutrition.
