Ingredients

  • Cooked chicken – 200 g, shredded or diced

  • Cucumber – 1 large, diced or sliced

  • Onion – ½, thinly sliced

  • Tomato – ½, chopped

  • Green chili – 1, finely chopped (optional)

  • Lettuce / Mixed greens – 1 cup

  • Olive oil – 1–2 tsp

  • Lemon juice – 1 tbsp

  • Salt & black pepper – to taste

  • Fresh coriander / mint – 1 tbsp, chopped

Execution

1. Prepare Vegetables

  • Wash and chop cucumber, onion, tomato, and greens → place in a large bowl.

2. Add Chicken

  • Add shredded/diced chicken on top of vegetables.

3. Dress Salad

  • Drizzle olive oil and lemon juice → sprinkle salt and pepper → toss gently.

4. Serve

  • Garnish with coriander or mint.

  • Serve chilled as a healthy lunch or snack.

Additional tips

  • Use grilled or roasted chicken for richer flavor.

  • Toss just before serving to keep cucumber and greens crisp.

  • Add nuts or seeds like sunflower or pumpkin for crunch and extra nutrition.
