Ingredients

  • Boiled chickpeas – 1 cup

  • Onion – 1 small, thinly sliced

  • Tomato – 1 small, chopped

  • Cucumber – ½, chopped

  • Green chili – 1, finely chopped (optional)

  • Lemon juice – 1 tbsp

  • Olive oil – 1 tsp

  • Salt – to taste

  • Black pepper – ¼ tsp

  • Fresh coriander / mint – 1 tbsp, chopped

Execution

1. Prepare Vegetables

  • Chop onions, tomato, cucumber → place in a mixing bowl.

2. Mix Salad

  • Add boiled chickpeas → drizzle olive oil and lemon juice → sprinkle salt and pepper → toss gently.

3. Serve

  • Garnish with fresh coriander or mint.

  • Serve chilled as a healthy snack or side dish.

Additional tips

  • Use freshly boiled chickpeas for better texture; canned chickpeas work too.

  • Soak chickpeas overnight before boiling to reduce cooking time and enhance digestibility.

  • Add capsicum, carrots, or roasted nuts for extra crunch and flavor.
