Ingredients
Boiled chickpeas – 1 cup
Onion – 1 small, thinly sliced
Tomato – 1 small, chopped
Cucumber – ½, chopped
Green chili – 1, finely chopped (optional)
Lemon juice – 1 tbsp
Olive oil – 1 tsp
Salt – to taste
Black pepper – ¼ tsp
Fresh coriander / mint – 1 tbsp, chopped
Execution
1. Prepare Vegetables
Chop onions, tomato, cucumber → place in a mixing bowl.
2. Mix Salad
Add boiled chickpeas → drizzle olive oil and lemon juice → sprinkle salt and pepper → toss gently.
3. Serve
Garnish with fresh coriander or mint.
Serve chilled as a healthy snack or side dish.
Additional tips
Use freshly boiled chickpeas for better texture; canned chickpeas work too.
Soak chickpeas overnight before boiling to reduce cooking time and enhance digestibility.
Add capsicum, carrots, or roasted nuts for extra crunch and flavor.
